Ingredients :
- 6 small brinjal (chopped)
- 1 medium onion (finely chopped)
- 1 medium potato (chopped)
- 1 tbsp of vegetable oil
- salt to taste
Spices :
- 1 tsp of cumin powder
- 1 tsp of coriander powder
- 1 tsp of chilly powder
- 1/2 tsp of turmeric
How to :
- heat the oil in the pan
- add onion, cook for 20 seconds
- add potato & brinjal, cook for 3 minutes
- add all spices cook for 15 seconds
- sprinkle little water into it
- add salt & cook for 2 minutes
- again sprinkle little water into it & cook for 2-3 minutes
- garnish with coriander leaves
- Serve the Brinjal Thick Curry
