Ingredients :
- 3 pieces of brinjal
- 1 medium onion (finely chopped)
- 1 medium tomato (finely chopped)
- 1 tbsp of garlic paste
- 1 tbsp of ginger paste
- 1 tbsp of olive oil
- 1 tbsp of vegetable oil
- 1 glass of water
- salt to taste
Spices :
- 1 tsp of cumin
- 1 tsp of cumin powder
- 1 tsp of coriander powder
- 1 tsp of garam masala (optional)
- 1 tsp of chilly powder
- 1/2 tsp of turmeric
How to :
- add brinjal in the bowl, mix with cumin & olive oil
- heat the pan & add brinjal, cook for 5 minutes
- heat the oil in the pan
- add onion, garlic & ginger, cook for 20 seconds
- add brinjal cook for 30 seconds
- add all spices cook for 15 seconds
- add tomato and cook for 30 seconds
- add salt & cook for 30 seconds
- add water & simmer for 15 minutes
- garnish with coriander leaves
- Serve the Brinjal Curry
